Salmon

2- 6oz. Salmon filets with skin

1/4 Cup Canola oil

2 Tbsp. Capers

2 Tbsp. Lime zest

Salt & pepper 

2 Cups jalapeño wine


  Jalapeño wine reduction:

2 cups jalapeño wine @ medium heat for 30 min. 

or until reduced to 1 cup. 

Brush both sides of salmon with oil then salt and pepper.

Place in cast iron grill pan on medium high. Cook 5 min.on each side.

Remove salmon to serving plates. Add 1/2 cup of jalapeño wine 

reduction in pan with salmon juices. Immediately pour sauce over fish. 

Sprinkle with capers and lime zest.

   

Oyster Sauce Chicken Wings 

2 Lbs. Chicken wings                              2 Tbsp. Soy sauce 

3 Slices ginger root                                 1 Tbsp. Brown sugar

1 Garlic clove, crushed                             1 Tbsp. 5-spice powder

3 Tbsp. Oyster sauce                                1 Cup Chicken broth

1 Cup Jalapeño wine

Place chicken wings in large frying pan and add ingredients.

Bring to a boil over medium heat. Simmer, covered, until

wings are tender, 20-30 minutes. Remove lid and boil to evaporate

sauce to 1/2 cup. May be served hot or cold.   

   

Bloody Mary

4 oz. Tomato juice

2 oz. Jalapeño wine ( or to taste )

1/4 oz. Lime juice

1/4 tsp. Worcestershire sauce

Celery salt

Ground pepper

Tobacco sauce ( optional or to taste )

Celery stalk

1/2 oz. Vodka ( optional )

 

Jalapeño Martini

4 oz. Jalapeño wine

4 tsp.Olive juice

1/2 oz. Vermouth

1 oz. Gin 

1-2 Olives
